Super Simple Chicken Salad (whole 30, paleo options)


So I’m either super lazy or super tired it seems come lunch time. So I keep this super simple lunch ready to go all the time.

I make this super simple chicken salad with celery stalks on a bed of romaine or spinach, usually with some Wholly Guacamole to mix in too! Buy the individual portion cups or the Aldi version, to have fresh avocado available at all times. Not just when the avocado decides to be ripe!


However, today I made it and was out of lettuce. Two giant celery stalks and chicken salad used to fill me, but I’m thinking baby is going through a growth spurt, because Mama was still hungry today!

Now I generally make this in a way that is not Whole 30 approved, but pretty close. The only difference is the mayo and the pickle/relish you use. I have egg sensitivities so I love to use JustMayo from Hampton Creek brand. It works wonderfully, but not Whole30 compliant. You can make your own, use Primal Kitchen’s version, or just use some guacamole/avocado if following Whole 30.


Also, we are kind of pickle snobs here. Haha! I love Claussen, and honestly its the only pickle I will eat by itself. I also only like dill relish, so that is what I choose generally. Either make your own or find some that is compliant if you are on whole 30 because Claussen is not approved.

Then for the chicken I keep these in the cabinet, found at my local Kroger. However, if the price is reasonable and I have time. I throw 3-5 chicken breasts in the crockpot, cover in broth/water and cook on low all day. Shred and then use this fresh that week.

And that is it! Super simple, but effective 😀

IMG_0007Oh, you want more flair? Add some hot sauce. Franks works great, but we tried this Sweet Baby Ray’s version and WOW! It’s amazing!

Make it buffalo style with a little hot sauce. Bonus: both Franks and Sweet Baby Ray’s are Whole 30 compliant!

Simple Chicken Salad


1lb shredded chicken

1/4 c mayonnaise (Just Mayo or Primal Kitchen)

1 Tbsp dill relish or diced dill pickles

optional: 2 dashes hot sauce.


  1. Mix all ingredients.
  2. Serve and Enjoy!

  • diced/shredded carrots
  • diced/minced red onion
